Rotisserie Style Turkey Deli Meat

Sliced rotisserie style turkey deli meat made with sous vide

Homemade turkey deli meat takes two ingredients and a sous vide. This rotisserie style turkey breast is firm, juicy, and slices cleanly for sandwiches, wraps, and meal prep.

A frozen turkey breast, Southern Blend poultry seasoning, and a precise water bath give you the bite of store-bought deli meat without fillers, binders, or meat pastes.

If you’ve ever looked at the ingredients of deli meat and wondered if there was a better way, this recipe is for you.

Why Make Homemade Turkey Deli Meat Instead Of Buying It?

Incredible Flavor

Poultry seasoning gives the turkey a savory, rotisserie style flavor. Sous vide keeps every slice juicy.

Perfect for Meal Prep

One turkey breast makes enough sliced deli meat for a full week of lunches and then some! Freeze extra slices in portions and have lunch ready made lunch meat all month

No Fillers or Meat Pastes

Unlike many store-bought deli meats, you’re in complete control of every ingredient that goes into this recipe.

Surprisingly Affordable

Cooking a whole turkey breast costs less per pound than premium deli counter turkey.

What Is Sous Vide and Why Use It for Deli Meat?

Sous vide (French for “under vacuum”) is a cooking method where food is sealed in a bag and cooked in a precisely temperature-controlled water bath.

For deli meat, that control matters. Holding the turkey at exactly 145°F gives the same firm, yet very moist bite as store-bought deli meat, without fillers or meat pastes. It’s a simple way to cut back on highly processed foods, and a popular option for anyone avoiding heavily processed deli meat, including during pregnancy (remember, I’m not a doctor… always follow your doctor’s guidance on deli meat!)

Ingredients

For a full list of ingredients, be sure to reference the recipe card below!

  • Frozen Turkey Breast – Turkey breast is lean, cooks evenly, and slices cleanly once chilled. It cooks safely from frozen. Remove the netting and discard any included gravy packet, since it isn’t used.
  • Poultry Seasoning, Southern Blend (Badia) – This blend gives the turkey its rotisserie style flavor. Press it firmly into the meat on all sides so it holds through the cook.

Equipment You’ll Need

Sous Vide Machine – Holds the water at an exact temperature for even, repeatable results. Used world wide in restaurants to perfectly replicate dishes.

Silicone Sous Vide Bags by Silivac – Reusable, medical grade silicone bags. Zero plastic waste and no recurring bag costs. Use code TREASURE to save 10%. Check them out here!

Container – A large, heat-safe container to hold the water bath. Use it again for the ice bath.

Instructions to Make Rotisserie Style Turkey Deli Meat

  1. Unwrap the Turkey
Remove the frozen turkey breast from the netting. Discard the netting and any included gravy.
  2. Trim the Skin
Remove all skin from the breast.
  3. Season
Coat all sides generously with poultry seasoning. Press it into the meat.
  4. Vacuum Seal
Seal the turkey in an airtight bag. Reusable silicone bags work best, but plastic sous vide bags also work.
  5. Sous Vide
Cook at 145°F for 4 hours. Cook for 3 hours if the turkey is thawed. Reusable bags by Silivac sink, but if other bags are used it is recommended to weigh them down with a metal spoon.
  6. Ice Bath
Leave the turkey in the bag and submerge it in an ice bath for 30 minutes.
  7. Chill and Slice
Refrigerate overnight in the bag. Remove, pat dry, and slice as thin as you like.

Frequently Asked Questions

Why Remove the Skin?

Skin turns soft and rubbery in a sous vide bath. Removing it gives clean, aesthetically pleasing cold cut slice. If you plan to eat this while hot, feel free to leave the skin on during the sous vide process. To crisp the skin, pat dry after finished in the bath and place under the broiler on high watching carefully while it browns.

Can I Cook the Turkey Breast From Frozen?

Yes. Cook frozen turkey breast for 4 hours at 145°F. If it’s fully thawed, cook for 3 hours.

Is There an Alternative to Cooking in Plastic?

Traditionally, sous vide cooking has always relied on these BPA free vacuum seal bags that often come with your vacuum seal machine. In a personal effort to ditch single use plastics and minimize micro plastic leeching, I now use these resealable silicone bags. Use code TREASURE for 10% off. Plastic sous vide bags also work if you prefer.

The silicone is medical grade, and platinum cured meaning it is the same silicone used in many baby bottle tops and implants as well as the medical tubing used during surgeries. Read the full Technical Verification & Safety Standards report here.
